4 chicken sausage links, Andouille or Cajun, slice in half lengthwise then slice 1/2 in thick at an angle

1 1/2 c shrimp, thawed

1/2 bag fresh frozen mix vegetable blend, (corn gr. bean, carrot) thawed

1 cup celery, diced

1/2 c grape tomatoes, sliced in half

1 jalapeno, small dice

1/2 large green pepper, diced

1 T coconut oil

a few dashes of cayenne pepper

a few dashes of black pepper

a few dashes of chili powder

1/2 t onion powder

1/2 t garlic powder

 

Melt coconut oil in a large skillet, add celery. Cook 2 minutes, add jalapeno and green pepper. Cook until slightly browned and tender. Add vegetables, shrimp and sausage. Cook until shrimp is cooked thoroughly and other items are heated. Add seasonings and blend together. You can garnish with fresh minced parsley if you’d like. Serves four
