Protein Pumpkin Pie

A fantastic way to end any meal. This Protein Pumpkin Pie is a guilt free dessert that compares to any regular pumpkin pie recipe. Try this pie with coconut whipped cream or cream cheese frosting

 

Crust:

1 scoop About Time Pumpkin spice Latte, or you can also use: vanilla, cinnamon swirl or birthday cake whey protein isolate

1/2 c almond meal flour

1 T flax meal

1 t cinnamon

3 T melted coconut oil

Pre heat your oven to 325 degrees. Gently spray a pie pan with non stick spray. Mix all the dry ingredients together for the crust. Add the melted coconut oil and toss. Place crust into tray and spread around to coat the bottom and slightly up the sides. You do NOT need to press this together or make it stick like a traditional crust. The liquid from the batter will be enough to bake this into the pie!

Pie Batter:

1- 29 oz can of Pumpkin (or you can use fresh, cooked)

4 scoops About Time Pumpkin Spice Latte, or you can also use vanilla, cinnamon swirl or birthday cake whey protein isolate- choose only 1 flavor

1 c unsweetened almond milk

2 T vanilla extract

2 T coconut flour (optional)

1T bulk stevia ( you can use more depending on how sweet you like your pie)

1 t cinnamon

1 t pumpkin pie spice

1 t salt

1/2 t nutmeg

1/4 t allspice

1/4 t ginger

dash of cloves

Blend coconut flour (optional), spices and protein together. Add the pumpkin and mix well until all powder is incorporated. Add the vanilla extract and almond milk, mix well. Pour batter over top the crust, tap pie pan to even out. Bake pie on 325 degrees for 50-55 minutes. Check pie, knife or toothpick should be ALMOST clean, not completely as it will finish off while resting. Finish baking if needed, checking every few minutes. Cool completely as this allows the spices to meld together. Serve with cranberries, whipped coconut cream, cream cheese frosting  or any of your favorites. Yields 8 servings
