Maple Sugar Cookies

This recipe is quick and simple- and Gluten Free! Maple Sugar Cookies are a delight to snack on while relaxing with a protein latte during these colder months. Try making other variations of these by swapping out the sweetener with other gluten free options or adding chopped nuts or other fillers. Maybe even drizzle with dark chocolate- Enjoy!

Yields 18 Maple Sugar Cookies

1/2 c almond flour

1/4 c coconut flour

1/4 c oat flour- gluten free

1/4 c AboutTime Birthday Cake protein

1/4 c coconut oil- softened

1/4 c 100% maple syrup

2 T vanilla extract- gluten free

1 T flax + 3 T water

5 packets stevia

1 t baking soda

1/2 t baking powder

1/4 t salt

Maple Sugar Cookies

Preheat your oven to 350 degrees. In a small bowl mix the flax and water- set aside. In a medium bowl place the almond flour, coconut flour, oat flour, protein, stevia, baking powder, baking soda and salt- blend well. Add the maple syrup to the flax mixture- blend. add this to the dry mix and blend well. Add the softened coconut oil to the batter and blend in well. Scoop on a lightly sprayed cookie sheet, you can lightly flatten cookies or make into any shape you like. Bake 7 minutes

* other variations- Try adding chopped nuts or dried fruit- be sure to chop them into small pieces to make a better eating experience. You can drizzle with chocolate or add in chocolate shavings. Use a different gluten free sweetener to make a different flavor of cookie- or add a little cocoa powder or Match green tea- Keep in mind- if you add powders such as cocoa or Matcha green tea, you will need to up the coconut oil just slightly.
