:) Adding coconut flour and flax meal to a cauliflower crust pizza makes it hold up so much better:

 

2 cups frozen cauliflower florets

1/2 cup frozen diced onions and bell peppers

1 cup shredded mozzarella cheese

1/2 cup liquid egg whites

2 Tbsp flax meal (or ground salba or chia seeds)

2 Tbsp coconut flour

1/2 tsp baking powder

1/2 tsp garlic powder

 

Preheat oven to 350 degrees F.

 

Microwave frozen veggies uncovered in a glass bowl for 6-7 minutes (so that they are cooked through, but dry). Let the veggies cool so they are safe to touch. Add remaining ingredients and purée using a stick blender.

 

Spread the mixture on a baking sheet lined with parchment paper until it is about 1/4 inch thick. Bake for 40 minutes, flipping it over halfway through.

 

Spread on your sauce, cheese, and toppings and broil for 2-3 minutes.
