Lemon Poppyseed Coconut Cream Doughnuts

Who said doughnuts were a NO-NO on a healthy eating meal plan? NOT US!!! Try these great tasting Lemon Poppyseed Coconut Cream Doughnuts!!

 

1/4 t poppy seeds

1/4 c almond meal

1/4 t baking powder

1/8 t salt

1/2 scoop About Time Vanilla or Birthday Cake Protein

1/4 c coconut flour

2 packets Stevia

zest of 1 lemon

 

Mix together in a bowl, then in a separate bowl mix together the following:

1 egg

1/4 c ricotta cheese or Greek yogurt or coconut yogurt

1/2 c unsweetened Almond coconut milk

1/2 t vanilla extract

Juice of 1 lemon

1 T melted coconut oil

Add wet to dry and blend together

 

Glaze:

1/4 scoop About Time Vanilla or Birthday Cake protein

1/2 t vanilla extract

1 to 2 T unsweetened almond coconut milk

Mix together to make glaze, Spoon over each donut then top with some of the toppings of your choice

1T unsweetened coconut flakes, sprinkles, chopped nuts or toppings of your choice!

 

I used my mini donut machine to make these. I am sure you can bake them at 325 degrees using a donut tin. this yields 8 mini donuts or 4 small donuts in a donut tin

cals- 70

fat- 4 g

protein- 4 g

carbs- 1.5 g
