Hungry for a Healthy Twinkie?

Hungry for a Healthy Twinkie? These were really light and sponge like but different tasting than a real Twinkie- due to using pumpkin, but a very good twist on a Twinkie.

 

I am allergic to eggs so I will write in what i used and a different option on a few ingredients. I think eggs would have been even better, but I didn’t want to endure a long ER visit today

3/4 c almond flour

1/2 c cottage cheese- *( you can exchange 1 1/2 eggs for this)

1/2 c pumpkin

1 scoop About Time vanilla whey isolate

1 1/2 t Stevia

2 packets TruVia- erythritol

1 t cinnamon

1/2 t vanilla extract

1/4 t baking soda

dash of salt

Pre heat oven to 325 degrees. Mix together protein, almond flour, baking soda, salt, sweeteners and cinnamon together. In another bowl, mix together cottage cheese (or eggs), vanilla and pumpkin. Add dry ingredients to the wet ingredients and fold together.

If you have a twinkie pan- please use it. otherwise, use a muffin tray. Line 6 spaces and gently spray with non stick spray. fill liners and bake 30 minutes. They may look done before hand but don’t take out. You need these to dry out (sorta). Cool on a wire rack.

Filling:

2 oz cottage cheese- *(can use cream cheese or marscapone)- *I prefer marscapone

1 scoop About Time vanilla whey isolate

1 T pumpkin

3 packets Stevia

2 t vanilla extract

Mix all ingredients together except protein. Add protein and blend together. Once muffins are cool make a hole on top and fill with the frosting mixture. I made a piping bag out of a sandwich baggie and a piping tip.

Fat- 8.25 g ( from the almond flour mostly)

Carbs- 6.5 g

Protein- 10.3 g
