Healthy Protein Graham Crackers

This Healthy Protein Graham Cracker recipe tastes so good as a batter I was worried I wouldn’t have any left to make the crackers. I will have to make a RAW recipe using these ingredients.

Healthy Protein Graham Crackers

1 c oat flour

2/3 c About Time Cinnamon Swirl protein

1/3 c coconut flour- (1/4 c, 2 T)

1/3 c molasses

3 T water- hot

2 T plain Greek yogurt

1 T flax meal

1 T coconut oil- melted

1 1/2 t cinnamon

1 t baking soda

1 t pure vanilla extract

3/4 t salt

4 packets Stevia

 

Preheat the oven to 350 degrees. Have a light colored baking sheet sprayed well with non stick spray ready, Also a large piece of wax paper. (as long as the baking sheet) In a bowl mix together the oat flour, 1/4 c coconut flour, protein, baking soda, cinnamon, salt and stevia, blend well. in a small bowl place the flax meal and hot water, set aside. In a larger bowl place the Greek yogurt, melted coconut oil, vanilla extract and molasses, mix well. Place flax in the microwave for 30 seconds, add the molasses mixture, blend well. Add the dry ingredients to the wet ingredients, mix well, batter will be sticky. place 1 T of coconut flour on your counter. scoop out dough onto that flour and lightly toss to coat the outside of the dough so it is manageable. Place dough on well sprayed tray, gently begin to press out with your hands. Use part of the last 1T of coconut flour to slowly cover surface. Top dough with the well sprayed wax paper (place sprayed side on dough) to roll out dough onto the tray. Roll out gently a few times, remove wax paper, coat top with remaining coconut flour and roll out dough to the edges. Remove wax paper. Bake for 5 minutes. remove from oven and cut into rectangles ( I made 30) once cut through the dough bake an additional 3-4 minutes. Remove from oven, let sit on tray a minute or two before removing. Place on a wire rack to cool.

At this point the crackers are softer like a sponge cake and taste great. you can top these with a cinnamon cream cheese and at like a cake or cookie or allow them to cool uncovered until the next morning. They will be crisp like a cracker.
