Grits and Sweet Potato Spoon Bread

This recipe for Grits and Sweet Potato Spoon Bread will be a great addition to anyone’s holiday menu or a tasty side dish for a weekend get together

Grits and Sweet Potato Spoon Bread

 

2 large sweet potatoes- stab with a knife, place into microwave to cook until soft, set aside to cool

1 1/2 c water

1/2 c grits

1 t salt

Place water and salt into a small sauce pot, boil water, add grits. Cook until done, set aside

Preheat your oven to 350 degrees.

Peel sweet potatoes and place into a large mixing bowl, mash them. Add:

3 scoops About Time Unflavored whey protein isolate

2 T molasses

2 T coconut milk- full fat

1 diced and deseeded jalapeno

1 minced clove of garlic

1/2 t onion powder-(can use scallions)

1/4 t paprika

1/4 t black pepper

Mix well.

add:

4 slices cheddar cheese. Leave all the slices together. Break apart into small chunks, add to the mixture and fold together.

Spray  a baking dish well with non stick spray, pour in the batter. Bake for 45 minutes, scoop out as a side dish and enjoy. Or you can cool slightly and slice
