Crustless Vegetable Pizza + Blueberry Smoothie

Healthier meals have no taste?? Not here! Crush those cravings with this flavorful Crustless Vegetable Pizza + Blueberry Smoothie!

Vegetable Pizza

1 Eggplant sliced ½ inch thick

¾ cup halved cherry or grape tomatoes

¾ cup thinly sliced zucchini

¾ cup thinly sliced yellow squash

1/4 of a large sweet onion- slivered

1/2 cup crumbled feta cheese

¼ cup fresh thyme and basil-sliced

3 T olive oil

3 T Balsamic Vinegar

Salt and fresh cracked black pepper

almond flour for dredging

 

Dredge eggplant slices in almond flour and shake to remove excess. Panfry in 3T olive oil until tender but firm and brown.

Cool on a wire rack

Add slivered onions to the pan and cook 3 to 4 minutes. Remove and set aside

Slice tomatoes in half. Slice zucchini and squash thinly- 1/8 thick

Toss tomatoes, zucchini, squash and onions with balsamic vinegar and thyme and basil. Season with salt and pepper to taste

Lay eggplant slices on a cookie sheet and layer them with the veggie mix. Broil in oven for 5 minutes. Top with feta cheese and broil until golden brown

Blooming Blueberry smoothie

1 cup raspberry pomegranate goji juice

5 oz vanilla Greek yogurt

2/3 cup Blueberries

¼ c chopped spinach

1 scoop About Time birthday cake

1 T balsamic vinegar glaze

 

Blend together- serves 2 large shakes. Or pour into ice cube trays and freeze for 2 to 3 hours for frozen yogurt
