Coconut Almond Apple Crumble with Coconut Ice Cream

3 Apples, cored and diced (2×2)

1 scoop About Time Vanilla Protein

1/4 c Spelt flour

1/4 c Almonds, sliced

3 T unsweetened Coconut flakes

3 T Unsweetened coconut almond milk

2 T Coconut oil

2 T Greek yogurt plain

1 T Flax meal

1 T Almond extract

3 Stevia packets

2 t Cinnamon

1 t Salt

Lemon juice

Preheat oven to 350 degrees. Dice apples and drizzle with a little lemon juice to prevent browning. Place apples in a 2 or 3 qt pan or an 8×8 pan. Mix together in a larger bowl, protein, spelt flour, cinnamon, flax meal, Stevia and salt. Add coconut oil and Greek cream cheese and almond extract to the dry ingredients. Using your hands or a pastry blender, knead into your dry ingredients to make your crumble topping. Add coconut flakes and sliced almonds into the crumble, fold until evenly distributed. Top the apples with the crumble pushing some down in between the apple slices. Bake for 22-25 minutes until topping is lightly browned.

 

Coconut ice cream ingredients:

1 c light coconut milk

1/2  small banana, frozen and cut into slices

1 T vanilla extract

1 Stevia packet

4 to 5 ice cubes

 

Add all items to a blender and blend until frozen and smooth. top crumble with 3 T of this mixture.
