Chocolate Quinoa Cake

This Chocolate Quinoa Cake is moist and decadent! A great way to end a meal without any guilt! This recipe is loaded in protein and garnished with a protein ganache

Chocolate Quinoa Cake

 

1 c Quinoa flour

1 c coconut milk (can sub almond milk, almond coconut, will give you a lighter flavor)

2 scoops About Time chocolate protein

1/2 c canned pumpkin

1/3 carob or cocoa powder

1/4 c coconut oil- not melted

3 T flax meal

2 T pure Vanilla extract

1 oz Greek cream cheese, or Sour cream or greek yogurt

1 T plus 1 t stevia

1/2 t salt

1/2 t baking soda

1/2 t baking powder

TIP* try adding zest into this cake or berries or different extracts to change up the flavor. Garnish accordingly. ex. Orange zest maybe add a cute trim of sliced oranges or fill the center with homemade jam or peanut butter

 

Preheat your conventional oven to 350 degrees. This recipe can make an 8 inch round cake or cupcakes. Spray the desired pan or tins you want to use (cupcakes i would line the pans). Set aside

Place quinoa flour, protein, cocoa powder, flax meal, stevia, salt, baking powder and baking soda into a medium mixing bowl, mix until well combined.

Add the coconut oil and cream cheese. Using a pastry blender or a fork or your hands, blend the coconut oil and cream cheese into the dry mix until well incorporated.

Add the pumpkin, mix well.

Add the coconut oil and the vanilla extract, mix until you achieve a nice smooth batter

I made the 8 inch round cake so I baked it for 33 minutes. Cooking time varies so 30 to 35 minutes depending on your oven. When done, remove and cool on a wire rack completely

 

Frosting:

2 scoops About Time chocolate protein

2 T cocoa powder

dash of salt

water- about 1/2 c (judge by texture)

Mix dry ingredients together. slowly add water and keep mixing until you achieve a nice thick but pour able icing. I cut my cake slice then topped it with the icing. You can pour directly on top of the cake and allow to set, then cut too.
