High Protein Desserts – Oh My!

I bet you never thought you’d hear someone tell you that Chocolate Chip Muffins, Whoopie Pies, and Pizza Cookies could be healthy high protein desserts. There’s a first for everything friends, and I’m here to tell you that all those delicious desserts can be made with the About Time Protein Pancake Mix!!!  Better yet, they can even be gluten free, and ready in under 10 minutes!

With the new Pancake Mix you can make so much more than just pancakes! Although you’ll feel like you’re indulging in a rich decadent dessert; you’ll really be fueling your body with these all-natural, gluten free, and protein packed treats!

Ingredients (Makes 6 Muffins)

Directions:

  • Preheat Oven to 350 degrees.
  • Spray muffin tin or line with silicone cups and fill 6 prepared cups halfway full. Place muffin tin in oven and bake for 8-10 minutes or until a toothpick comes out clean. Remove from oven and let cool a bit before eating.
  • Procake Muffins can be enjoyed warm or cold! They can also be topped with peanut butter, maple syrup, or any other fun all natural ingredients!

**Hey all you parents out there, these are also a great snack to throw in the kiddo’s lunchboxes! They’ll think they’re chocolate chip treats, but really they’re all natural, nutritious, and delicious snacks!

Ingredients

Ingredients for Pizza Cookie Toppings:

  • 2 TBS Fat Free Cream Cheese
  • ¼ Cup Fat Free Ricotta
  • 2 tsp Stevia
  • ½ tsp Vanilla Extract
  • 1 TBS Unsweetened Almond Milk
  • 2 TBS PB2 Chocolate Powdered Peanut Butter (or melted Peanut Butter)
  • ½ TBS Mini Chocolate Chips

Directions:

  • Preheat oven to 350 degrees.
  • Mix together About Time Chocolate Chip Protein Pancake Mix and Almond milk. Spray a 9” Tin Foil Pie Crust pan with cooking spray and pour batter into pan. This batter should thinly cover the bottom of the pan.
  • Place in oven for 8 minutes, or until toothpick comes out clean. Remove from oven.
  • While pizza cookie crust is baking, combine first 5 ingredients for toppings and place in small blender or mix with hand mixer until smooth.
  • Prepare PB2 by mixing with water. Add a little extra water to make a more “saucy” than a typical peanut butter consistency. (If using peanut butter, melt approximately 2 TBS in microwave so the consistency is more like a sauce or liquid).
  • Once the procake pizza cookie crust is cool enough to remove from tin pan, place on plate, top with white sauce, then PB2 sauce, sprinkle with chocolate chips. Enjoy!

Although I LOVE pancakes and could definitely eat them any time of day, I have a serious sweet tooth and am always looking for a healthy dessert to satisfy my cravings!
